Filleting knife with a beautifully curved, stained and waxed beech handle and a thin, pointed and flexible full-tang blade, with a cutting section of 18 cm. Filleting knife from the highest line of Opinel kitchen knives, referring to the traditional craft of ancestors – Les Forgés 1890 (Les Forgés in translation = forges). These are knives forged in a furnace, with excellent cutting properties. You will use the filleting knife mainly when preparing fish. However, it will make your work easier wherever you need to cut into thin slices.

- Stainless steel X50CrMoV15:
- 15% chromium = corrosion resistance
- 0.5% carbon = perfect cutting ability and easier sharpening
- 30° sharpening angle (15 degrees on each side) ensures a perfect edge
- Hardness 56-57 HRC (Rockwell scale) = high wear resistance
- The geometry of each blade (shape, length and thickness) is optimized for its specific use
- Each blade has a protective cover

The combination with the top-quality X50CrMoV15 steel has created a completely unique product that fully deserves a place of honor in your kitchen.
Wood
95% of the wood used to make the handles comes from sustainably managed French forests. There is no excessive deforestation and no air pollution during long transport – all of this means less strain on nature. The main wood supplier has its forests in the French Jura region and is of course PEFC certified.
Stainless steel
The choice of steel determines the durability and quality of the blade, and therefore due attention is paid to it, as it ultimately affects the main useful properties of the entire product. For the knives of the Les Forgés 1890 collection, a special steel X50CrMoV15 was chosen. This steel is highly resistant to corrosion thanks to the addition of 15% chromium. The addition of carbon (0.50%) ensures an excellent edge that is easier to sharpen and at the same time keeps its shape even when in contact with harder material.
Opinel - a design icon
The story of the now iconic Opinel brand begins in the 19th century, when merchant Victor-Amédée Opinel learned to forge nails during his travels and subsequently founded his forge in France. After his death, his son Daniel took over the craft, becoming the local farmers' "sharps maker" because the blades of his sickles and scythes were widely acclaimed as the sharpest possible. However, the real Opinel - a folding pocket knife - had to wait a while for its discovery. Daniel Opinel's eldest son, Joseph, decided to follow in his father's footsteps and, driven by artistic passion, combined handcrafting with the most modern technology at the time and created a small miracle. The year was 1890 and the Opinel folding pocket knife saw the light of day, a knife loved from day one and passed down from generation to generation. The knife, which over the years has gained hundreds of thousands of fans around the world, has become a common part of many households and somewhat of a symbol of all of France...
