The complete collection consists of a chef's knife , a bread knife, a Santoku knife , a paring knife, a fillet knife , a boning knife and a vegetable knife. The special feature of Les Forgés 1890 knives is that they are entirely forged in a circular structure from X50CrMoV15 stainless steel, which benefits from the fibers and quality of hot forging. They offer incomparable balance and resistance. These high-quality knives allow precise and easy cutting. They are equipped with a stabilized beechwood handle with an ergonomic shape that pays homage to the traditional pocket knife and offers a remarkable grip.

More than 130 years ago, Joseph Opinel invented the pocket knife that still bears his name in a small Savoyard village. The company, still run by Joseph Opinel's descendants, manufactures products ranging from small pocket knives to kitchen and cutlery knives and gardening tools in Chambéry, in the heart of the French Alps.
